Cabra Negra Studio is an intimate tasting space in Quito dedicated to exploring coffee beyond the familiar. With only six seats at the bar, each session brings guests closer to the ingredients, ideas and techniques behind every course.
This is not a traditional coffee shop.
It is a space for curiosity, conversation and discovery.

The Studio presents a collection of guided tasting menus, each built around a distinct theme.
One may explore Ecuador through specialty coffee, fine cacao and local ingredients. Another may examine processing, fermentation, texture or the relationship between coffee and milk. Some journeys venture into mixology, spirits and unexpected pairings.
Every menu offers a different way of understanding coffee and every seat places you at the center of its creation.
COFFEE IS ONLY THE BEGINNING.
Here, coffee becomes an ingredient, a language and a point of departure.
It may be filtered, clarified, distilled, fermented, paired or transformed. It may appear alongside cacao, botanicals, seasonal produce or spirits. Familiar flavors return in unfamiliar forms, revealing dimensions that often remain hidden inside the cup.
Technique gives each idea its shape.
Origin gives it meaning.
EVERYTHING HAPPENS AT THE BAR.
There are no distant tables and no separation between preparation and service.
Each course is created and presented directly in front of six guests. Aromas emerge, textures change and stories unfold across the bar. Questions are welcome. Conversation is part of the tasting.

El Studio ofrece varias experiencias guiadas, cada una con un concepto propio.
Algunas exploran Ecuador a través del café, el cacao y sus ingredientes. Otras se adentran en los procesos, las texturas, la leche, la coctelería o los maridajes.

Aquí, el café puede filtrarse, clarificarse, transformarse o combinarse con ingredientes inesperados.
